Whole Wheat Protein Waffles

I may have discovered the impossible (a waffle that is just as much tasty as it is healthy) but you’ll have to decide for yourself!  These waffles are made from 100% whole wheat flour and loaded with over 58 grams of protein per batch!  Perfectly crisp on the outside and light and airy on the inside, they’ll have you running back for more.  Make a batch to freeze for a grab and go breakfast or indulge in some ‘breakfast for dinner’ like me! Ah, and I almost forgot the best part… these waffles are made completely in a blender.. yes, no mess, no fuss, one thing to clean.. pretty sure it can’t get much better than that!

WW Protein Waffles: 2-3 servings

1 cup unsweetened apple sauce

1/2 cup cottage cheese

3 eggs

2 teaspoons honey

2 teaspoons baking powder

1 cup buttermilk (can be substituted for any milk of choice)

1 teaspoon cinnamon

2 cups whole wheat flour ( I used King Arthur’s Stoneground)

Preheat a waffle iron according to the product’s recommendation (I usually set mine to medium heat).  Combine all ingredients into a blender and blend until smooth.  The batter will be very thick. You may add a splash or two more of milk if you would like but it is not necessary.  Spray waffle iron with nonstick spray before each use, pouring about 1/2 cup of batter per waffle.  Cook until golden brown.  Top with condiments of your choice!
