Berry Smoothie Bowl

If you’ve read my previous post, then you know that I was very excited to put my bee pollen to use!  Usually bee pollen is used as toppings for yogurt or smoothies because it must be kept frozen.  Heating the pollen will make it loose all of its healing powers and will cause it to spoil!  I’ve recently been eating “smoothie bowls” for a filling mid-afternoon snack or as my sweet “treat” at night.  This is just one variation of a smoothie bowl that pairs perfectly with a sprinkle of bee pollen.

Smoothie bowl for 1:

1/2 cup Greek yogurt

1/2 a frozen banana

2 strawberries

1/4 cup blueberries

1/4 cup spinach

1/2 cup coconut water

Toppings (sprinkled): Bee Pollen, Chia Seeds, Hemp Seeds, sliced fruit

Combine everything but the toppings into a blender and mix until smooth.  Enjoy immediately with toppings of choice!
