Sesame Ginger Carrot Salad

This is one of my all time favorite salads!  It’s fresh, bright, crunchy, full of flavor, and is great as a snack or for dinner when paired with a protein ( I love it with shrimp).  It is also my “go-to” meal when I don’t really feel like cooking.  Between the colorful veggies and the yummy dressing, it’s hard to resist a bite.  I can eat this salad 6 days in a row and still crave it on the 7th day!  I may seem like I’m exaggerating, but really, I just like it THAT much!

Carrot Salad: Feeds 2

4-5 medium carrots, peeled into ribbons

1 red pepper, thinly sliced

2 scallions, thinly sliced

1 teaspoon minced chives

*Black sesame seeds, microgreens, pea shoots*

 

Dressing:

1 clove garlic

2 teaspoons fresh minced ginger

1/4 cup rice vinegar

1/4 cup sesame oil

2 teaspoons honey

1 teaspoon sriracha

In a bowl combine carrot ribbons ( I peel until I can’t anymore and then thinly slice the rest of the carrot so I don’t waste any!) pepper, scallions, and chives.  In a blender combine all dressing ingredients and blend until smooth.  Toss carrots in dressing and garnish with sesame seeds, microgreens, and pea shoots.  Eat as is or with a protein of choice!
