Kale Citrus Salad

So… it has been a very busy, long, never ending few weeks for me!  And while I don’t mind being busy because I’m doing what I love, it does take  a toll on my eating habits for sure (and the time I get to spend on W&S) !  I’ve been pulling early mornings/late nights with no days off, fueled by a skittles and bread diet (I’m sure many can relate)… However, once I get a second breathe and the craziness calms down, my body goes into full slug mode and doesn’t feel very good at all… When I find myself being pulled in all different directions and desperately need to get back on track, I turn to my favorite kale salad!  I’ll admit, I used to really not like kale!  But as I kept eating it and trying different recipes, and especially after I grew it myself last summer, it has turned into one of my favorite greens!  One of the tastiest ways to eat it is raw (with toppings of course!), massaged in a little olive oil and lemon to help break down the toughness.  This salad is perfect in the winter to brighten up the cold days or a great refreshing dish during the summer months.  The combination of the crunchy kale, bright citrus, creamy avocado and goat cheese, and almonds makes this salad satisfying enough to eat as a meal!

Kale Citrus Salad: For 2

4-5 stalks kale, washed, stem removed and chopped

1-2 grapefruits, segmented

1/2 avocado, sliced

1/4 cup almonds, slivered or chopped

1/4 cup goat cheese

olive oil

1 lemon, juiced

salt and pepper to taste

Start by prepping your kale.  Once chopped add to a bowl and drizzle about 1 tablespoon of olive oil over the top.  Add lemon juice and salt and pepper.  Massage the kale, making sure to get oil into the nooks and crannies, with your hands.  Then add the grapefruit, avocado, goat cheese, and almonds.  Toss to combine.
