Avocado Artichoke Salad
I have a lot of favorites on this site (I mean why would I share anything less) but THIS salad always takes the cake. Each time I make it I’m reminded why I love it so much, which then leads to a week long binge because I just can’t get enough! It’s tangy, yet creamy (thank you avocado) and the perfect side dish to a weeknight, back deck dinner. The combination of lemon and lime juice together creates a salty taste so just be mindful when seasoning at the end. This lemon and lime trick is great for those on a salt restricted diet as well!
Avo. Arti. Salad: Feeds 2 (if you’re me, just 1)
1 romaine heart, outside leaves removed, quartered lengthwise and chopped
1/2 shallot, minced
Juice of 1 lemon and 2 limes
2 tablespoons olive oil
2 avocados, diced
1/2 can artichoke hearts (in water), chopped
Shaved pieces of pecorino Romano
salt and pepper to taste
In a mixing bowl combine all ingredients and toss well! Yum!
