Chili Lime Vinaigrette
This is one of my favoriteeeee salad dressings! It is seriously so tasty and the perfect homemade touch to a summer dinner party. I’ve said it before, homemade condiments are a million times better than any store bought version and usually pretty easy to make. Pair this dressing with a simple grilled shrimp for an entrée salad, or just use greens and make a grilled skirt steak with chimichurri as the main course!

Chili Lime Vin: 2.5 cups
4 scallions, roughly chopped
2 shallot, roughly chopped
1/4 cup honey
1 tablespoon chopped cilantro
1/2 cup chopped basil
1 small hot red/orangey pepper (see picture), seeded and split down the middle
zest from 3 limes
juice from 5 limes
1/4 teaspoon chili powder and smoked paprika
1/2 teaspoon salt
1/2 cup apple cider vinegar
1 cup extra virgin olive oil
In a blender combine all ingredients except for the olive oil. Blend for 30 seconds and add oil. Blend for another 30 seconds to a minute or until everything is combined. Store in airtight container or bottle for up to 3 weeks.
