Protein Snack Bites
There are about a million versions of these protein packed little bites of heaven, and each and every one is my favorite! I love making huge batches of these protein bites (perfect for freezing) and trying out new flavor combinations. This recipe will give you a basic idea of what goes into these bites, but feel free to get as crazy and creative as you’d like! Substitute with different kinds of nut butters, flax seeds, hemp hearts, dried fruits, nuts, the list can go on and on. Not only are these delicious, they also make me feel really great about snaking and knowing that I’m fueling my body with whole, healthy ingredients feels really good too! Protein Bites: Makes about 10
8 dates, pitted and soaked in warm water for 10 minutes
1 tablespoon coconut oil
1 tablespoon honey
1/4 cup nut butter of choice
1 tablespoon chia seeds
2 tablespoons shredded coconut
1 teaspoon black sesame seeds
2 tablespoons sun flower seeds
2 tablespoons Enjoy Life dark chocolate morsels
2 tablespoons each dried pineapple and cranberries
1 cup oats
In a food processor blend the soaked dates, coconut oil and honey, if still a little chunky thats fine. In a mixing bowl combine all ingredients together and mix, using hands to really blend together. Form into balls and refrigerate or freeze for protein packed snacks throughout the week!
