Berry and Mint Smoothie
Soooo this smoothie is totally my new obsession, like drink it twice a day obsessed! I also make it two-ways: 1 with dairy (greek yogurt) in the morning for more protein and 1 without dairy, that I usually drink for my night time, snack attack craving. The combination of flavors are amazing, but the mint is the star of the recipe! I like to buy my fruit fresh and then I prep and freeze the strawberries and blueberries, first, to get the frozen texture without adding ice cubes, and second, so they won’t go bad before I can use them (welcome to “broke girl in the city” life).
Berry and Mint Smoothie for 1
1/2 cup watermelon, cubed
1/2-3/4 cup frozen blueberry and strawberry mix
2 heaping spoonfuls of your favorite greek yogurt (mine is Fage) – omit this if making non-dairy
2 tablespoons mint leaves (I really just grab off a small hand-full from a bunch, stems and all)
1/2 cup coconut water (add more if too thick)
In a blender combine all ingredients, blend until smooth, and enjoy!
